Cabbage plants are adapted to cool weather and grow
best when temperatures are between 60 and 80 degrees. Most
cabbage varieties will tolerate temperatures into the low 20s.
Planting dates should be planned so that harvest dates occur in
cool weather.
Cabbage plants prefer loose, moist, well drained soil. Mulch
will help keep soil loose and cool. Cabbage plants can be
easily started from seed in transplant containers or directly
in garden soil. Most garden centers sell both seeds and
seedlings. When purchasing seedlings, buy plants that have at
least four complete leave. Plant seedlings almost up to the
first real leaves.
Cabbage family seeds should be planted in 1/2 inch of soil
and should be sown about two weeks before you would plant
transplants outdoors. Cabbage is a hardy vegetable that grows
especially well in fertile soils. There are various shades of
green available, as well as red or purple types. Head shape
varies from the standard round to flattened or pointed. Most
varieties have smooth leaves, but the Savoy types have crinkly
textured leaves.
Cabbage is easy to grow if you select suitable varieties and
practice proper culture and insect management. Always regarded
as a good source of vitamins, cabbage recently has been shown
to have disease-preventive properties as well.
Green cabbage is grown more often than the red or Savoy types,
but red cabbage has become increasingly popular for color in
salads and cooked dishes. The Savoy varieties are grown for
slaw and salads. Varieties that mature later usually grow
larger heads and are more suitable for making sauerkraut than
the early varieties.

This New Jersey adaptation of an older English variety, 'Early Wakefield', has proven a reliable favorite for US gardens since the 1840s, especially in Northern climes. Quickly produces large, dense, elongated 7" heads, with a distinctly sweet flavor ideal for eating raw in salads and slaws, cooking or pickling. Weighing 2-3 lbs., the heads have a small core and good protective wrapper leaves. 60-65 days.
LET259 Glory of Enkhulzen
A very versatile heirloom variety first introduced in 1899 by Sluis & Groot in Enkhuizen, Holland. Each dark green-blue head grows to be around 8-12” in both width and height and weights 6-10 lbs. After 90 days, push on the heads to see if they feel solid and ready for harvest. This cabbage is excellent in slaw, kraut, stir fry, and salad and is an excellent keeper. This cabbage is used in soups and stews. It can also be braised and is considered an excellent variety for homemade sauerkraut.
3414 Cabbage K-K Cross
K-K Cross is a medium-sized hybrid cabbage with 7-9 pound heads. Popular in tropical/sub-tropical markets because of its high heat tolerance, K-K Cross has medium-green, oblate heads. Recommended harvest is summer to fall. Has excellent texture and flavor and is the most recommended variety for hot zones like the south.
JB132 OS Cross
This high-quality, bolt-resistant hybrid produces exhibition-size heads. Space at least 3 feet apart for room to grow!
The OS Cross cabbage is a sweet-flavored variety that can grow quite large, with some heads weighing up to 50 pounds. Summer-harvested cabbages take between 80 and 90 days to mature, while winter-harvested ones take between 100 and 115 days for maturity.
JM212 Red Acre
Considered to be one of the finest early reds you can grow and it is a knockout in the garden and has terrific flavor. Delicious in coleslaw! The solid 3 lb heads grow to a 6"-7" diameter. An added bonus is that it holds well in the garden and stores well. Space saver so perfect choice for the home gardener. 75 days from transplant.

TWT097 Yukina Savoy Chinese Cabbage
Yukina Savoy looks like a larger and savoyed version of Tatsoi. The thick, dark green, shiny, spoon-shaped leaves grow upright on pale green petioles. This vigorous and easy to grow plant is heat and cold resistant and can be grown year round. It has a mild flavor when harvested young. 25-45 days.
TWT015 Early Flat Dutch
Early Flat Dutch Cabbage is known for its excellent, savory taste and is a popular choice for home sauerkraut chefs and is rich in vitamin C. They are a large variety, with heads commonly reaching up to 8 inches and weighing close to 10 pounds. Early Flat Dutch has a flattened oval shape, for which it is named, and grows earlier in the season than their Late Flat Dutch counterpart. They have a large central head and few external leaves. It is a staple food for many gardeners and stores well if not exposed to frost. 100 days.
JB151 Michihili
Michihili is an heirloom Chinese cabbage. Its light green leaves are tender and delicious, ideal for stir fries and pickling, and many other Asian dishes. Michihili Chinese cabbages thrive in milder climates but can be grown in any zone. Warmer areas may experience a slightly earlier harvest date and heads may grow in a looser leaf formation. 75 days.
